Tasty Chicken Tacos

Awesome dinner tonight - took some cooked chicken breast from the fridge (made it yesterday by cooking it in some coconut oil), shredded the HECK out of it and threw it in a pan. Medium heat. One to two tablespoons of chili powder. Stir. Add about 8 oz of Pace Picante Sauce and 1 can of black beans (drained). Bring to boil, stir on and off for around 15 minutes.  Yummm!  Add a whole grain tortilla, fat-free cheese and some spinach and you've got yourself a tasty chicken taco.

  1. I make something similar in the crock-pot for Dustin. 1 can black beans rinsed and drained, 1 can corn, 1 8oz jar salsa of choice and 1 can low fat cheddar cheese soup. Cook on low for 8 hours. Serve over brown rice or quinoa. YUM.
